Nutty Banana Protein Pancakes
Only have 10 minutes? That’s plenty of time to whip up this simple sustaining breakfast.
Makes 2 pancakes
INGREDIENTS
1 scoop protein powder
1 large free range egg
25g extra fine rolled oats
1/2 ripe banana, broken into chunks
1 tsp yacon syrup (or agave nectar, fruit syrup, rice syrup or raw honey)
30ml milk
30ml water
1 tbsp coconut oil
nut butter and extra fruit to serve
STEP-BY-STEP METHOD
Blend the first 6 ingredients to a smooth batter.
Warm half the oil in a small, non-stick frying pan.
Pour in half the batter and cook for 1 to 2 minutes on each side (Don’t be tempted to get all fancy and flip them like I did – this batter is way too delicate).
Repeat with the remaining oil and pancake mix.
Serve topped with a thick dollop of your favourite nut butter, and extra fresh fruit.
