A lunch-time classic, I’m sure you’ll agree, but this serving suggestion gives the humble sandwich a completely new look.
  • 3 wooden skewers
  • 1 slice of bread
  • butter or vegetable spread
  • fillings:
    pesto + cherry tomato + cubed cucumber + olives + baby mozzarella + basil
    houmous + red pepper + olives + tofu
    cocktail sausages + chestnut mushrooms + basil + red pepper

1. As with all great sandwiches it starts with the bread, which you’ll butter or smear with pesto, humous or cream cheese. Cut into cubes and push on to the skewer.

2. Next slide on your chosen ‘fillings’, which you’ll have cleverly cut into bite sized pieces. Leave basil leaves whole. Put a piece of bread halfway through, then continue with the fillings and put the last piece of bread at the end.

Make sure to keep all the ingredients at one end of the wooden skewer before you place them in a takeaway dish. Then when you eat it will be easier to reach in and grab one without touching the food on the other sticks.
